In this unique class, we'll combine the perspectives of a local chef and a home cook, each strongly influenced and inspired by seasonal, locally-available ingredients.

Experienced Chef Scott Pampuch and food blogger/writer and home cook Stephanie A. Meyer come together to help you create your seasonal kitchen provisions - from the first spring nibbles through the late harvest bounty. The focus will be on extending your garden, farmer's market or CSA gifts throughout the year...with time-honored techniques, helpful restaurant tips and translations to making great quality food at home.

Heavy apps, drinks and take-home treats provided.

May 24th The May class will kick off the class series by discussing the tips, tricks and tools that you'll want to consider as you move through spring and into summer. We'll talk about cooking as a lifestyle and a process, and guide you through translating your personal goals and needs into a plan of attack. With a bit of planning and structure in the spring, we can help you get your kitchen established with the equipment, ingredients, and techniques that will help you get through the seasons.

  • canning "outside of the cookbook" - basic recipes and inspired flavor combinations

  • to eat: antipasto platter featuring make, taste + take accompaniments and flatbread

July 26 It's grilling season! Let's hone in on techniques around meat. We'll spend some time learning how to break down fish and chicken - two great ways to save money, try some new things (smoked fish bellies anyone?!) and use more of what you paid for. We'll also talk about grilling techniques and other fun things to try on the grill.

  • breaking down whole chickens and fish - smoking, brining, making stocks

  • cold smoking veggies

  • grilling tips and tricks, doctoring up commercial sauces

  • make + taste: grilled hangar steak & salad

  • take: bouquet garni-type basting brush to use at home

Aug 23 Midseason is time to start thinking about what's coming your way...because the gardens are about to explode! We'll talk about new ways to use the same old produce, helping you find creative ways to get through all of that stuff!

  • new twists on tomatoes - savory jam, oven-drying, confits, making your own gravy/pasta sauces

  • new twists on berries - berry sugars, beverages, savory applications

  • using, drying and storing fresh herbs

  • making flavored syrups

about our instructors Chef Scott Pampuch, host of "In Search of Food" on Ovation, is the executive chef at Milwaukee's Iron Horse Hotel, and founding mastermind behind Tour de Farm and the restaurant, Corner Table.

Stephanie A. Meyer is a food blogger, writer and photographer for Minnesota Monthly, Food & Wine's Kitchen Adventures, and her own Stephanie also created Fortify - A Food Community (formerly known as Minnesota Food Bloggers ).
